One of my easiest (and I know I say this all the time but this time I really mean it) ....one of my easiest ever recipes that is absolutely delicious and quick to make. This meal is a favorite in my house and even my son who tends to be partial to mushrooms enjoys this recipe.
I would ay use oyster mushrooms over any other simple because of the meaty texture it has and the fact that you can shred them into strips .....

Ingredients
100g butter
1 tablespoon crushed garlic
250g spaghetti (half a pack), cooked according to package instructions
1/2 pack oyster mushrooms, shredded
1/2 cup natural yogurt
1 teaspoon chili flakes
A handful of chopped parsley
Salt, to taste
Pepper, to taste
Parmesan cheese, for garnish
Instructions
Start by cooking your spaghetti according to the packet instructions (best to have the pasta al dente). If you're really multitalented, you can cook the pasta as you make the sauce, that's what I did 😊
To prepare the sauce, melt the butter in a pan over low heat then add the crushed garlic and sauté gently until the garlic is cooked through and fragrant. The add the shredded oyster mushrooms to the pan with the garlic and cook the mushrooms over medium heat until they are soft and fully cooked.
Stir in the chopped parsley, chili flakes, salt, and pepper and cook for a few minutes to allow the flavors to combine. Finish off with the natural yogurt and stir well, cooking for another minute or two.
Finally turn off the heat and add the cooked spaghetti to the pan. Toss thoroughly to coat the spaghetti in the sauce.
Plate the pasta immediately and garnish with grated Parmesan cheese.
