Pea fritters are a delightful and versatile dish that can be enjoyed as a snack, a light meal, or even as part of a larger spread. The combination of sweet peas, tangy feta, and fresh herbs makes these fritters incredibly flavorful. They’re fluffy, golden, and perfect with a drizzle of hot honey or just on their own.

Ingredients
2 cups mashed peas
1 cup flour
100g feta cheese, finely diced
3 spring onions, finely sliced
2 eggs
1 ½ cups milk
A handful of chopped parsley
Salt and pepper, to taste
Cooking oil
Instructions
In a large bowl, combine the flour, salt, parsley, and spring onions. Mix well to ensure the ingredients are evenly distributed. Add the eggs and mix thoroughly until a thick batter forms. Gradually pour in the milk, stirring continuously, until the batter reaches a slightly thinner consistency.
Fold in the mashed peas and feta cheese, mixing gently until everything is well incorporated.
Heat a pan over high heat and add a generous amount of cooking oil. Once the oil is hot, use a tablespoon to scoop the batter into the pan, forming small fritters. Depending on the size of your pan, you can cook several fritters at once.
Cook the fritters for a couple of minutes on each side, or until they are golden brown, risen, and fluffy. Remove them from the pan and place them on a plate lined with paper towels to drain any excess oil.
Serve the fritters warm with a drizzle of hot honey or enjoy them as a delicious snack on their own.
