I'm actually a fan of peas but certain members of my household struggle with it so I try and find creative ways to include peas in our meals.
One of my favorite ways is to make it in a salad that is simply packed with vegetables. The salad is great as a meal on its own and also as a side ... Oh and you can have it warm or cold, it tastes just as delicious.
Ingredients
1 cup cooked peas
2 raw carrots finely diced carrots
1 medium red onion, finely diced
4 medium finely diced cooked potatoes
1 cup finely chopped cooked French beans
A handful of chopped parsley
3 tablespoons mayonnaise
2 tablespoons lemon juice
1/4 teaspoon salt
A pinch of black pepper
Instructions
Place the peas, carrots, red onion, potatoes, and French beans into a large bowl.
Add the mayonnaise, lemon juice, black pepper, and salt to the bowl.
Mix everything thoroughly until the vegetables are evenly coated.
Add the chopped parsley and gently mix it through.
Serve and enjoy your fresh vegetable salad!
