Prawn Linguine

For the love of seafood!!!!

What do you do with giant prawns besides a kickass marinade and a good grillin'? Why you make a pasta that's what you do.




I had these giant prawns in my freezer and was eager to cook them because I hate keeping stuff in storage for too long. So I took them out and tossed them in a bog standard marinade as I waited for the air out there to tell me what to do.

Then it came to me. Linguine!!!! So simple and uncomplicated and my mum who is terribly fussy about 'new' or 'experimental' food, would have no problem digging in.


Serves 2

  • 4 giant prawns

  • 250 grams whole wheat linguine

  • Tomato paste

  • Tinned chopped tomatoes

  • Cooking cream

  • Parmesan

  • 1 large chopped onion

  • Chives

  • Salt and pepper to taste

  • 1 tbs of dried mixed herbs

In a pan drizzle some olive oil and sauté your onions and garlic on a low heat until the onions are translucent. Then add the tomato paste mixed in with a little bit of hot water to make a light paste and the tin of chopped tomatoes. Season with salt,  pepper and mixed herbs and let this simmer for about 5 minutes or until the tomatoes are soft. Once its cooked through, add 1 cup of water and the prawns and let this simmer as you make your pasta..


To start with I marinated my prawns, shell on, in the juice of 1 large lemon, some chilli flakes and garlic for 30 minutes. After this, put your prawns on a hot grill and cook for 6 minutes on each side and set aside.


Tip: Always remember to de-vein your prawns. This is the centre digestive system of the prawn and eating it is not a pleasant experience. You also don't have to have the shell on your prawns. I like mine shell on because I enjoy the process of taking my prawn out of the shell.

For the linguine, in a pan bring some water to the boil with a pinch of salt and some olive oil and add your linguine to the water. Cook according to the instructions on the pack and once your linguine is cooked al-dente, drain all the water from the pan and add the linguine into the sauce pot and mix well.

Plate up and enjoy!!!
